Pinot Noir
Pinot Noir is the most temperamental grape and keeps winemakers on their toes. The main challenge is its thin skin which makes it susceptible to heat damage, disease & pest pressure. At EBURON, we pick the bunches first and then hand-select individual grapes. Just to make sure only the best go into the barrel. This is an elegant style Pinot Noir (12% alc.) with bright red fruit, nice acidity and subtle tannins, giving structure to the wine.

Fermentation & Aging
After picking, we destemmed 90% of the grape bunches and included 10% whole clusters for a 24-hour cold maceration for phenolic and colour extraction. Fermentation started after two days and finished within the next two weeks. After fermentation was complete, we gently pressed and transferred to new light toast oak barrels by Francois Frères Tonnellerie in Burgundy. Malolactic fermentation occurred immediately after primary fermentation and the wine was left for aging before bottling after 8 months.
Food Pairing
Serve slightly chilled and enjoy on its own or with a meal. This complex wine combines very well with salads and fish dishes, even some risotto, pasta, chicken or vegetarian cuisine. And if you feel adventurous, try it with some slightly seasoned meat.
