Auxerrois
This Auxerrois was 100% barrel fermented and barrel aged. The oak is well integrated in the wine and adds slight vanilla tones to several layers of bright yellow fruit, pear and melon with a smell of flowers. Auxerrois is generally low in acidity and round and juicy in flavour.

Fermentation & Aging
After pressing the grapes, the juice went straight into 100% new light toast oak barrels, made by Francois Frères Tonnellerie in Burgundy. After primary fermentation finished, it was left in barrique to complete malolactic fermentation and the wine further matured for 8 months before bottling.
Food Pairing
Serve cool and enjoy on its own or with a meal. This style of wine combines especially well with Asian dishes, sushi, hearty pasta sauces and buttery fish.
